Ingredients
- Green tomatoes sliced 1/4" to 1/3"
- milk
- flour
- 5 eggs (beaten well)
- Progresso Italian Bread Crumbs
- Oil (vegetable, lard or peanut... my favorite is peanut)
Method
- When coating tomatoes, be sure to coat completely.
- Dip tomato slices, one by one, in milk, then flour, next egg (this is the hard one... work on it good) then bread crumbs.
- Place on wax paper covered plate. Top layer with more wax paper before starting on second layer of tomatoes.
- Cover in plastic and place in fridge over night.
- The next day, heat a pan of oil (enough so the oil comes a little over half way up the tomatoes (1/3"?) on medium heat. Cook until both sides are nicely browned. Set on paper towels to absorb extra oil. Add a little salt immediately.
