Ingredients

Crust

  • 1 ½ cups digestive biscuit or graham cracker crumbs
  • ½ stick butter, melted
  • 1 tbsp sugar**

Filling

  • 1 full block cream cheese (8 oz), softened
  • ½ cup sugar
  • 1 tbsp lemon juice
  • ½ tsp vanilla extract
  • dash salt
  • 2 eggs

Method

Crust

  1. Combine and press into a buttered 9" pie plate.

Filling

  1. Mix cream cheese and sugar on medium speed until combined.
  2. Add in lemon juice, vanilla and salt.
  3. Add eggs, one at a time, mixing until just combined.

Baking

  1. Pour cream cheese mixture into prepared crust. Bake in a preheated 325F for 35-40 minutes
    or until set.
  2. Remove from oven and cool on a wire rack for 1 hour then chill for at least 2 hours.
  3. Store in refrigerator.

This is a super simple cheesecake that makes a very manageable amount of dessert. I was inspired here by Rita's Recipes.

** If using Graham Crackers you can omit the extra sugar as they are already sweet.
