Ingredients
Crust
- 1 ½ cups digestive biscuit or graham cracker crumbs
- ½ stick butter, melted
- 1 tbsp sugar**
Filling
- 1 full block cream cheese (8 oz), softened
- ½ cup sugar
- 1 tbsp lemon juice
- ½ tsp vanilla extract
- dash salt
- 2 eggs
Method
Crust
- Combine and press into a buttered 9" pie plate.
Filling
- Mix cream cheese and sugar on medium speed until combined.
- Add in lemon juice, vanilla and salt.
- Add eggs, one at a time, mixing until just combined.
Baking
- Pour cream cheese mixture into prepared crust. Bake in a preheated 325F for 35-40 minutes
or until set. - Remove from oven and cool on a wire rack for 1 hour then chill for at least 2 hours.
- Store in refrigerator.
This is a super simple cheesecake that makes a very manageable amount of dessert. I was inspired here by Rita's Recipes.
** If using Graham Crackers you can omit the extra sugar as they are already sweet.
