Curry Chicken Salad

Ingredients

  • Cooked Chicken, cut into small pieces
  • Mayonnaise
  • Curry Powder
  • Honey
  • Turmeric
  • Grapes, cut in half or quarters
  • Raisins
  • Celery, cut into small pieces
  • Toasted raw almonds, chopped fine
  • Salt
  • Pepper

Method

  1. Toast raw almonds in a small saucepan on medium heat until they begin to brown. Take off the heat and either finely chop on a cutting board or grind in a nut grinder. Set aside to cool.
  2. Combine mayo, honey, curry powder, turmeric together in a small bowl.
  3. In another larger bowl combine chicken, celery, raisins, grapes, almonds. Pour dressing and mix well. Salt and pepper to taste. You may want to add more curry powder at this point too if it is not curry enough.

Good to Know

There are really no right or wrong amounts for this recipe. I usually use about 1/2 of a rotisserie chicken from costco, cut into small pieces. For that amount of chicken depending on if you like your salad dry or wet you can use about 1/4 cup of mayo (for dry) 1 tablespoon curry, 1 to 2 tsp turmeric, 1 tablespoon honey. The rest is eyeballing it. Leave out anything that doesn't sound appealing, but the grapes are rather essential.
