Creamy Gorgonzola Dressing | Peri's Place For Recipes

Ingredients

  • 2-4 cloves of garlic--minced
  • 2 Tbsp. olive oil
     
  • 1/2 Cup crumbled Gorgonzola - separated into 1/4 cup parts
  • 1/4 Cup mayonnaise
  • 1/4 Cup sour cream
  • 1/4 Cup buttermilk (plus more to thin as necessary)
  • chopped parsley
  • salt 'n' peppa
  • 1 Tbsp. lemon juice
     

Method

  1. In a small pan, heat olive oil and garlic over low heat, about 3 minutes. 
  2. When the garlic has shared its tasty goodness with the olive oil, add half of the cheese and let it slowly melt. Set aside to cool slightly.
  3. Combine mayonnaise, sour cream, and buttermilk. Add parsley, salt and pepper to taste.
  4. Slowly stir in the melted cheese and garlic mixture. Add lemon juice and combine thoroughly.
    Add remaining cheese crumbles. 
  5. Store in refrigerator with a tight fitting lid.

Good to Know

This is very close (but I think a wee bit better perhaps) to the Gorgonzola dressing we made at Napoli in Eugene back in '90 or so.
