Ingredients
- 1 cup all-purpose flour
- 1/4 cup milk
- 2 eggs
- 1/8 teaspoon ground nutmeg (scant)
- 1 pinch freshly ground white pepper
- 1/2 teaspoon salt
- 2 tablespoons butter (optional)
- 2 tablespoons chopped fresh parsley (optional)
Method
- Mix together flour, salt, white pepper, and nutmeg. Beat eggs well in the milk and add to the dry ingredients. Mix until smooth.
- Press dough through spaetzle maker, or a large holed sieve or metal grater.
- Drop a few at a time into simmering liquid. Cook 5 to 8 minutes. Drain well.
- (optional) Saute cooked spaetzle in your favorite cooking fat. Sprinkle with chopped fresh parsley, and serve.

Some people use a colander to press the dough through, but if you are going to make these often, it makes it so much easier with this.

I recommend doubling or tripling this recipe (depending on the number of people you are feeding). Spaetzle freezes well and goes with anything as a replacement for potatoes or rice.
