Ingredients
3-4 cups cucumber sliced thin
1 cup onion sliced thin
1 cup sugar
1/2 cup vinegar
1 tsp celery seed
Some salt to remove moisture from cucumbers
Method
Slice cucumbers thin and sprinkle with 3-4 tablespoons salt. Let sit in colander for and hour or so. Rinse well to remove salt.
After cukes are rinsed well, place all ingredients into a sealable container and place in refrigerator. They should be ready in a couple of hours, but the longer you let them sit the better they are. When you start running out of cucumbers and onions, slice more and add to the marinade. You should salt cucumbers like before or your brine will become thin.
Good to Know
I like to use a walla walla sweet onion, but any type will work for this.You can double this or triple this recipe.
