Ingredients
- 2-4 cloves of garlic--minced
- 2 Tbsp. olive oil
- 1/2 Cup crumbled Gorgonzola - separated into 1/4 cup parts
- 1/4 Cup mayonnaise
- 1/4 Cup sour cream
- 1/4 Cup buttermilk (plus more to thin as necessary)
- chopped parsley
- salt 'n' peppa
- 1 Tbsp. lemon juice
Method
- In a small pan, heat olive oil and garlic over low heat, about 3 minutes.
- When the garlic has shared its tasty goodness with the olive oil, add half of the cheese and let it slowly melt. Set aside to cool slightly.
- Combine mayonnaise, sour cream, and buttermilk. Add parsley, salt and pepper to taste.
- Slowly stir in the melted cheese and garlic mixture. Add lemon juice and combine thoroughly.
Add remaining cheese crumbles. - Store in refrigerator with a tight fitting lid.
Good to Know
This is very close (but I think a wee bit better perhaps) to the Gorgonzola dressing we made at Napoli in Eugene back in '90 or so.
