Ingredients
- Eggplant
- Shredded mozarella cheese
- Tomato Sauce (Marinara)
- Romano Cheese (optional)
- Parmesan Cheese
- Italian bread crumbs
- olive oil
- 4-5 eggs (for wash)
Method
- Cut eggplant into 1/4 inch thick lengths.
- Coat eggplant in egg wash and then breadcrumbs,
- pan fry in olive oil, medium temp adjust temp to brown 1 minute on each side. Place on paper towel to drain while cooking rest of eggplant.
- Warm marinara while cooking eggplant.
- Grease a 9 x 13 casserole and begin layering: eggplant (be creative, can do crisscross, lengthwise etc), marinara, mozzarella cheese, eggplant, marinara, mozzarella cheese, (repeat until top of pan).
- final layer of cheese include mozzarella & parmesan (romano)
- Place in 350F oven, middle rack for 40 minutes.
