  • Eggplant
  • Shredded mozarella cheese
  • Tomato Sauce (Marinara)
  • Romano Cheese (optional)
  • Parmesan Cheese
  • Italian bread crumbs
  • olive oil
  • 4-5 eggs (for wash)


  1. Cut eggplant into 1/4 inch thick lengths.
  2. Coat eggplant in egg wash and then breadcrumbs,
  3. pan fry in olive oil, medium temp adjust temp to brown 1 minute on each side. Place on paper towel to drain while cooking rest of eggplant.
  4. Warm marinara while cooking eggplant.
  5. Grease a 9 x 13 casserole and begin layering: eggplant (be creative, can do crisscross, lengthwise etc), marinara, mozzarella cheese, eggplant, marinara, mozzarella cheese, (repeat until top of pan).
  6. final layer of cheese include mozzarella & parmesan (romano)
  7. Place in 350F oven, middle rack for 40 minutes.
