Ingredients
- 180 g / 1 1/2 cup flour
- 200 g / 1 cup Sugar
- 22 g / 3 T cocoa
- 6 g / 1 tsp baking soda
- pinch / 1/4 tsp salt
- 237 g / 1 cup cold water
- 75 g / 5 T oil
- 15 g / 1 T vinegar
- 4 g / 1 tsp vanilla
Method
- Mix all dry ingredients well in a bowl.
- Combine all wet ingredients together, mix into dry ingredients. Mix well to get rid of lumps.
- Pour into a greased 9 x 9 baking pan.
- Bake for 25 - 30 minutes (when the toothpick comes out clean)
Good to Know
I like to make a mocha type cake by replacing 2 tbsp of the cocoa with espresso powder.
You can also replace the oil with your choice of fat. I have used apple sauce, sour cream and butter.
You can also leave out the cocoa (increase the flour by 4 Tbsp) and make a vanilla cake. You might need to futz with the proportions on this though.
This also makes about 12 cupcakes. Reduce cooking time to 18 minutes, or until toothpick comes out clean).
