Ingredients
- 1 cup butter
- 2 cups brown sugar (packed)
- 1/2 cup corn syrup
- 1 tsp salt
- 1/2 tsp baking soda
- 1 tsp vanilla
- 6 quarts popcorn
Method
- Pop corn and make sure to get all of the unpopped kernels out.
- Melt butter. Stir in sugar, syrup and salt. Bring to a boil, stirring constantly.
- When at boil, let boil without stirring for 5 minutes.
- Remove from heat and stir in soda and vanilla.
- Pour over popcorn, mix well. Spread on pan and bake 250 for 1 hour. Stirring every 15 minutes.
Good to Know
Be careful of the syrup. It is very hot. If while stirring some gets out of the bowl, do not pick it up with bare hands. You will burn yourself.
Optionally you can add nuts, like peanuts or almonds, when adding caramel to the popcorn. Kind of a homemade Cracker Jacks.
