Pancakes

Ingredients

  • 1 1/4 cup flour
  • 3 t baking powder
  • 1 T sugar
  • 1/2 t salt
  • 1 egg - beaten
  • 1 cup milk
  • 2 tsp oil (optional)

Method

  1. Mix all dry ingredients together
  2. In a measure cup add milk and egg, mix well. Add oil if using.

Good to Know

Variations:

Buttermilk Pancakes: Substitute buttermilk or sour milk for sweet milk. Add 1/2 tsp soda and cut baking powder to 2 tsp.

You can make your own buttermilk (sour milk) by adding 1 tablespoon of white vinegar to a measure cup and then adding enough milk for 1 cup. Let stand for five minutes to sour.
