Ingredients

Dry Ingredients:

  • 200g Rolled oats
  • 100g Nuts, chopped. Walnut, Pecan, etc., or a mix of nuts
  • 25g Pumpkin seeds
  • 15g Sunflower seeds
  • 15g Flaxseeds (linseeds)

Wet Ingredients:

  • 65g Maple syrup
  • 50g Almond butter
  • 20g Coconut oil
  • 10g (2 tsp) Vanilla
  • 1tsp Cinnamon
  • 1/2tsp Salt

Method

  1. Roughly chop the nuts and add the oats, pumpkin, sunflower, and flax seeds into a large bowl.
  2. In a pot over moderate heat mix the liquids and spices and stir until loose and mixed. No need to boil, heating the mixture just makes it easier to stir into the dry.
  3. Dump the wet ingredients into the dry and stir together until thoroughly mixed.
  4. Line a quarter baking sheet with parchment paper and spread the mixture evenly, pressing it lightly down with a spatula.
  5. Bake in a 325 degree oven for 30 minutes.
  6. Let the granola cool completely before breaking into pieces and storing in a sealed jar.

This recipe works with a quarter sheet pan in a small oven, but it is easy to scale up to larger batches. It does not include dried fruit like raisins which tend to get tough when baked. You can always add dried fruit after baking.
