In a large mixing bowl, add yeast, brown sugar & 1 1/2 cups warm water. Allow yeast to proof.
Add flour and salt and mix well.
Knead dough for 8 - 10 minutes either by hand or by mixer with dough hook.
Place covered in warm place for 1 hour to rise.
Combine 2 cups warm water & baking soda in shallow dish (pie plate works well). After the dough has risen, divide into 12 pieces. Roll each piece into a 1 1/2 foot rope, 1/2 inch wide. Twist into a pretzel shape, and dip into the baking soda solution. Place on a cookie sheet and let rise 15-20 minutes.
Bake at 450 for 8 - 10 minutes until golden brown. Brush immediately with melted butter and then sprinkle with coarse salt or cinnamon sugar.
