Ingredients
- 2 cups flour
- 4 tsp baking powder
- 3/4 tsp salt
- 1/3 cup sugar
- 4 Tbsp butter
- 2 Tbsp shortening
- 3/4 cup cream (or half-n-half)
- 1 egg
- handful blueberries
Method
- In a large mixing bowl, combine flour, baking powder, salt and sugar. Mix well. Cut in butter and shortening. In a separate bowl, combine cream with beaten egg then add to dry ingredients.
- Turn dough out onto a floured surface. Roll dough into a flat round on a piece of parchment paper about 3/4" to 1" thick.
- Put the blueberries on top of the scones and then slice scones into 8 pieces. Sprinkle with crystal sugar.
- Bake for 20 - 25 minutes depending on your oven. Check for doneness.
