Ingredients

  • 2 cups flour
  • 4 tsp baking powder
  • 3/4 tsp salt
  • 1/3 cup sugar
  • 4 Tbsp butter
  • 2 Tbsp shortening
  • 3/4 cup cream (or half-n-half)
  • 1 egg
  • handful blueberries

Method

  1. In a large mixing bowl, combine flour, baking powder, salt and sugar. Mix well. Cut in butter and shortening. In a separate bowl, combine cream with beaten egg then add to dry ingredients.
  2. Turn dough out onto a floured surface. Roll dough into a flat round on a piece of parchment paper about 3/4" to 1" thick.
  3. Put the blueberries on top of the scones and then slice scones into 8 pieces. Sprinkle with crystal sugar.
  4. Bake for 20 - 25 minutes depending on your oven. Check for doneness.
