  • 1 cup warm water
  • 4 tsp honey
  • 1 packet (2 1/4 tsp) yeast
  • 1 1/4 cup all-purpose flour
  • 1 1/4 cup whole-wheat flour
  • 1 tsp salt


  1. Mix warm water, honey & yeast together. Let sit 10 minutes until it becomes foamy.
  2. Meanwhile, put both flours & salt into food processor. With machine running, scrape liquid mixture into flour until dough forms. Knead the dough by pulsing until it is smooth and no longer sticky, about 30 times.
  3. Spray large bowl with nonstick spary, place dough in warm place, let the dough rise until it doubles in volume about 1 hour.
  4. Punch down dough, lightly sprinkle a work surface with flour, pat into a 8 x 12 rectangle. Fold into thirds, place in greased bread pan, cover losely with plastic wrap, let rise 1 hour.
  5. Preheat oven to 350F, bake on center rack until the loaf sound hollow, about 1 hour. Remove from the pan and cool completely on rack.
