Ingredients
- 2 cups flour
- 1 cup sugar
- 1 1/2 tsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 3/4 cup orange juice
- 2 Tbs melted shortening or oil
- 1 Tbs grated orange peel
- 1 egg, well beaten
- 1 1/2 cup cranberries coarsely chopped
- 1/2 cup nuts
Method
- Preheat oven to 350.
- Grease 9x5 inch loaf pan.
- Mix together dry ingredients. Stir in orange juice, oil, egg. Mix until well blended.
- Add cranberries and nuts. Spread evenly in loaf pan.
- Bake for 55 minutes or until a toothpick inserted in the center comes out clean.
- Cool on rack for 15 minutes.
- Remove from pan; cool completely.
