Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 3/4 cup orange juice
  • 2 Tbs melted shortening or oil
  • 1 Tbs grated orange peel
  • 1 egg, well beaten
  • 1 1/2 cup cranberries coarsely chopped
  • 1/2 cup nuts

Preparation

Preheat oven to 350, grease 9x5 inch loaf pan.

Mix together dry ingredients. Stir in orange juice, oil, egg. Mix until well blended.

Add cranberries and nuts. Spread evenly in loaf pan.

Bake for 55 minutes or until a toothpick inserted in the center comes out clean. Cool on rack for 15 minutes. Remove from pan; cool completely.

Makes 1 loaf.
