Ingredients

  • 1-1/2 tbsp Sugar (for the apples
  • 2 tbsp Sugar (for the egg whites)
  • 1/2 tsp sugar to sprinkle on top
  • 1 tsp Cinnamon
  • 3 tbsp Butter
  • 3 Medium Apples
  • 1/2 Cup Flour
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 3 Eggs, separated
  • 1/2 Cup Milk

Method

  1. Peel, core and thinly slice the apples. 
  2. Combine cinnamon and the 1-1/2 tablespoons of sugar and set aside. 
  3. In an ovenproof 10" skillet, melt the butter over low heat and swirl to coat entire skillet. Add the cinnamon sugar and apples. Continue to cook over low heat for about 5 minutes.
  4. To make the batter, stir together the flour, baking powder, salt, milk, and egg yokes. Mix with a whisk until smooth. Allow to sit 5 minutes.
  5. Beat the egg whites with the remaining 2 tablespoons of sugar until soft peaks form. Then fold the egg whites into the batter.
  6. Arranged the cooked apples in the skillet into an even layer, sprinkle with 1/2 teaspoon of sugar, and then pour the batter over the apples.
  7. Bake at 400 uncovered, for 10 to 15 minutes, until the top is golden brown.
  8. When done, loosen the apple pancake around the edges with a spatula, place a serving dish upside down over the pancake and then flip it over. Carefully pull the skillet away, leaving the apples on top.

Good to Know

Optionally serve with sour cream, whipped cream, or ice cream.
