Ingredients

  • 2 cups cauliflower and/or broccoli florets
  • 1 cup panko bread crumbs
  • 2 eggs, beaten
  • 2/3 cup cheddar cheese
  • 1 small shallot, diced very fine
  • salt & pepper

Preparation

  1. Steam your vegetables for 3-5 minutes. Chop them into small pieces either by hand or small food processor. Make sure to not process them too much. You aren't looking for a smooth paste. Allow them too cool for 5-10 minutes.
  2. In a bowl combine vegetables, cheese, beaten eggs, shallots, salt and pepper together well. Add about 2/3 cup of the panko bread crumbs and stir in, let rest 5 minutes. After 5 minutes check the consistency of the mixture. If it is still wet and does not hold together you may need to add the rest of the bread crumbs.
  3. When a small ball of the mixture can be formed into a tot, shape the mixture and place on a piece of parchment paper on a sheet pan. Bake for 25 minutes in a preheated 400F oven. Around 15 minutes into the bake turn the tots over to brown the other side.
